Fall is here! We don’t have AC in our apartment, and let me tell you, feeling the change in weather has gotten us so excited for the fall season. I am looking forward to boots, sweaters, crock-pot soup, and of course Trader Joes gluten-free pumpkin bread (We are obsessed).
Today has been a perfect Sunday, which had us craving football, cuddling, and homemade soup. Days like today are my favorite because we just lounge around the house and enjoy our home. Life can be stressful and we can get consumed by our routine, so it’s important to have days that are full of no routines or plans.
Jason and I decided to make some homemade tortilla soup for our first soup of the fall season. Here below is a simple tortilla soup recipe that we use every fall/winter season. It’s easy, yummy, and hearty. Enjoy!
Tortilla Soup Recipe
1/4 cup canola oil, peanut oil, or other high smoke-point oil
1/2 cup chopped onion
2 cloves garlic, minced
4 cups chicken broth or homemade chicken stock
1 can (14.5 oz) diced tomatoes, undrained
1/2 teaspoon coarse salt
1 1/2 cups shredded cooked chicken
Note: We put all of the ingredients above in the crock pot on low for 4 hours1
Chopped fresh cilantro
1 lime, cut into wedges
